A Light & Refreshing Dessert for Summer

You may recall that we recently took a Thai cooking class at our local Sur la Table store. One of the recipes we made was a light & refreshing dessert just perfect for the summer months! This Coconut-Lime Sorbet is easy and oh, so delicious. Try it for Mother’s Day or any of your upcoming summer events.

Our dessert was one of the standout hits of our Sur la Table Thai cooking class! Don’t be anxious if you’re not into coconut. This sorbet has a bright, light lime flavor and the coconut milk adds a perfect creaminess. It’s a wonderful finish for summer barbeques or a hearty dinner salad.

Refreshing Dessert - Coconut-Lime Sorbet

Light & Refreshing Dessert: Coconut-Lime Sorbet

  • 3 cups (about 1.5 cans) of unsweetened coconut milk
  • 1 cup granulated sugar
  • 1/8 teaspoon kosher salt
  • 1 tablespoon lime zest
  • 1/2 cup freshly squeezed lime juice

Set up and pre-chill the ice cream maker.

In a medium saucepan over medium heat, add coconut milk, sugar, salt, and zest. Heat mixture, stirring occasionally until sugar is dissolved.

Transfer to a medium bowl, add lime juice, and cool over an ice bath.

Transfer the mixture to the ice cream maker. Churn according to the manufacturer’s instructions for sorbet.

Enjoy immediately or transfer to a pre-chilled, freezer-safe container.

Coconut-Lime Sorbet

While I don’t make ice cream often, I own this Cuisinart model and have always been happy with it. If you make frozen desserts frequently, you may want to look into one of the more advanced models.

Halving a coconut to serve the sorbet makes for a fun and festive presentation. However, if you find that daunting, I found these cute little bowls with matching spoons on Amazon!
