As a busy, working mom to a houseful of always-hungry boys, Rachel knows a thing or two about cooking. But her desserts are what made her a legend among her friends and acquaintances!

Whenever she shows up at a graduation, birthday, or general cookout with one of these in hand, you’d better get to the dessert table STAT. Her goodies disappear in mere moments, especially if a group of teens happens to be around. Test them out with your family and friends and see the reaction you get!

Fritos For Dessert

  • 19-ounce bag of Frito scoops
  • 1 cup creamy peanut butter
  • 1 cup light Karo syrup
  • 1 cup sugar

Spread corn chips in greased 15 by 10 by 1 sheet pan.

In a saucepan over medium heat, bring corn syrup and sugar to a boil, stirring frequently to help dissolve the sugar.  Boil 1 minute. Remove from heat then stir in peanut butter until smooth.  Pour over corn chips.

Top with melted semi-sweet chocolate chips; sprinkle with M&M’s or both!

Cut into squares after they have cooled and set.

Chocolate PB Brownies

  • 1 20-ounce chocolate fudge brownie mix (Rachel likes Hershey’s Triple Chocolate)
  • 1/2 cup creamy peanut butter
  • 2 king-size packages Reese’s Peanut Butter Cups, coarsely chopped

For a 13 by 9 pan, prepare the brownie mix as directed. Before baking, melt the peanut butter in a microwave for 20-30 seconds. Drizzle peanut butter over the prepared brownie mix. Finally, sprinkle chopped Reese Peanut Butter cups over the mix and bake as directed.

Thanks again to Rachel for sharing her delicious recipes! These truly are two of the best chocolate-peanut butter desserts that I’ve ever tasted! For more recipes, check out these posts!
