4 Quick & Delicious Crockpot Freezer Meals to Keep on Hand

I try my best to menu plan each week but for those times when life just gets ahead of you, having these quick & delicious crockpot freezer meals on hand can be a real lifesaver!

What I LOVE about these particular freezer meals is that they are very quick to assemble and can be made with pantry staple ingredients. Only one requires a few fresh veggies and some chopping! For the rest, just purchase your protein and assemble. In an hour’s time, you’ll have your freezer stocked with an assortment of nutritious and tasty meals that you can pull out at a moment’s notice.

For all of these recipes, I use one-gallon freezer bags. This nifty gadget holds bags open for you and helps you avoid messy spills! And for quick clean-up, try these slow cooker liner bags.

Crock Pot Honey Garlic Chicken

Original recipe is from Fit Foodie Finds. Serves 6.

  • 1.5 lbs. boneless, skinless chicken breast
  • 3 tablespoons minced garlic
  • 1/2 cup honey
  • 1/2 cup soy sauce (or tamari)
  • 2 teaspoons red chili garlic sauce (I used this brand)

Combine all ingredients in a gallon freezer bag. Press out as much air as possible then seal the freezer bag. Add cooking instructions to the outside

. We enjoy this served with rice and steamed sugar snap peas.

Slow Cooker Chicken Enchilada Casserole

Original recipe is from Fit Foodie Finds. Serves 6.

  • 1.5 lbs. boneless, skinless chicken breast
  • 1 15-oz. can pinto beans, strained and rinsed
  • 2 cups minute brown rice (I used these individual cups and it turned out fine.)
  • 1 large green pepper, chopped
  • 1 large yellow pepper, chopped
  • 1/2 large yellow onion, chopped
  • 1 tablespoon minced garlic
  • 3 cups enchilada sauce
  • 1/2 tablespoon Frank’s hot sauce (or apple cider vinegar)

Combine all ingredients in a gallon freezer bag. Press out as much air as possible then seal the freezer bag. Add cooking instructions to the outside. Serve with your favorite Mexican-style toppings and sliced fresh fruit.

Slow Cooker Apple BBQ Pork Tenderloin

Original recipe is from Mommy’s Fabulous Finds. Serves 6.

  • 1-2 lb pork tenderloin
  • 1 cup chunky applesauce
  • 1 cup BBQ sauce
  • 2 tbsp minced dried onion

Mix applesauce, BBQ sauce, and dried minced onion in a small bowl. Put pork tenderloin in a gallon freezer bag and add applesauce/BBQ mixture. Press out as much air as possible then seal the freezer bag. Add cooking instructions to the outside.

We enjoy this with oven-roasted fingerling potatoes and a salad or coleslaw.

Slow Cooker Teriyaki Pork Chops

Original recipe is from Mommy’s Fabulous Finds. Serves 4.

  • 4 pork chops about 1-1.5 inches thick
  • 2 garlic cloves minced
  • 2 tbsp brown sugar
  • 1/4 cup soy sauce
  • 1/3 cup chicken broth
  • salt & pepper to taste

Sprinkle salt & pepper on pork chops, if desired. Mix garlic, brown sugar, soy sauce, and chicken broth in a small bowl. Place pork chops in a gallon freezer bag and top with brown sugar/soy sauce mixture. Press out as much air as possible then seal the freezer bag. Add cooking instructions to the outside.

We enjoy this with mashed potatoes and roasted broccoli.
