Perk Up Your Meals with a Tasty Quick Pickle Mix

Did you know that you can whip up a quick pickle mix in just 20 minutes! It’s a great way to add some extra zest to your dinner as well as to sneak in some extra vegetables. They work especially well with Mexican and Asian inspired dinners, both favorites in our house.

At the start of quarantine we signed up for the HelloFresh meal kit service thinking it would be a good time to mix up our dinner routine. We were super impressed with how flavorful the meals were and, in preparing them, picked up a few little tricks that we now incorporate when cooking on our own.

One of those tricks is quick pickled veggies! At HelloFresh they were most often served with Mexican or Asian inspired meals but they work just as well with grilled meats or chicken. In this post, I’ve included two of their recipe combos as well as a mix and match chart that you can use to inspire your unique blend. Try them out and be amazed at how much they perk up the flavor profile of your favorite dish!

NOTE: All of the pickles in this post are meant to be used within a few days and should be stored in the refrigerator.

Pickle Mix I

Quick Pickle Mix
  • 1 Persian cucumber or 1/4 to 1/3 regular cucumber
  • 3 small radishes
  • 5 teaspoons white wine vinegar
  • 1 teaspoon sugar
  • salt/pepper to taste

Very thinly slice cucumber and radishes. In a small bowl, combine vegetables with vinegar, sugar, and salt/pepper. Set aside, stirring occasionally, until pickled – about 15-20 minutes. Serves 2, easily doubled.

Great on Mexican-inspired dishes like tacos, burritos, fajitas, etc.

Quick Pickle Mix

Pickle Mix II

  • 1 shallot
  • 1 jalapeno
  • juice from 1 whole lime
  • 1/4 teaspoon sugar
  • salt to taste

Very thinly slice shallot and jalapeno. In a small bowl, combine vegetables with lime juice, sugar, and salt. Set aside, stirring occasionally, until pickled – about 15-20 minutes. Serves 2, easily doubled.

Great on Asian-inspired dishes like bahn mi, bulgogi and rice-based meals.
