Prime “bring-a-dish” season is almost upon us, so today I’m sharing one of my standard go-to’s: Cheesy Party Potatoes! This dish is by no means healthy but it IS crowd-pleasing and can be made ahead of time!


I first came across this dish at a neighborhood party. The neighbor who made it (Debbie F.), cooked up a QUADRUPLE batch and there was nary a scrap left by the end of the night! Needless to say, I had to the get the recipe. Since then it’s become “my” signature dish at an annual extended family Christmas party and is a favorite among both kids and adults!
Cheesy Party Potatoes Recipe
- 8 medium potatoes (skin on), boiled until soft and cubed
- 1 cup mayonnaise
- 1/2 cup diced onion
- 8 ounces mild cheddar cheese, cubed
- 8 ounces Velveeta cheese, cubed
- 1/2 pound bacon, cooked and crumbled
Boil potatoes with skins on until soft. Cool then cube potatoes into bite size pieces. Cook bacon until crisp then cool and crumble. Mix all ingredients with the potatoes except for the bacon. Put into a 9 x 13 pan and top with the cooked and crumbled bacon. Bake uncovered at 350° for 45 minutes.
This recipe is easy to double or even quadruple for super large groups! When doing so, I recommend mixing in individual batches, unless you have an enormous bowl, and then heating in a large roasting pan.
